They are paleo, free of any nasties, and as simple as anything to make… they may not look the prettiest, but trust me, they taste fantastic!
Whether you need to eat gluten free (like me) or not, these 4 ingredient gluten free banana pancakes are a fantastic alternative to a big, stodgy, sugar packed, wheat flour pancake. Don’t get me wrong, if I could indulge in a wheat flour pancake every now and then, I totally would – they are the most phenomenal of naughty breakfast treats – but I can’t. To sate my sweet breakfast cravings, I went on the search for some pancake alternatives that I could easily make at home. I have experimented with other pancake recipes, but the though of having to buy 5 different flour alternatives to make a batch of pancakes puts me off, and buckwheat pancakes don’t always do it for me. So far, this easy peasy 4 ingredient recipe has been the winner.
What is essentially an all natural banana omelette is actually so incredibly tasty, a great texture for a non-wheat flour pancake, and a fabulous way to add some extra protein and fruit to your diet.
HEALTHY, GLUTEN FREE BANANA PANCAKES
- 1 ripe banana
- 2 eggs
- Handful of blueberries**
- A pinch of cinnamon**
- Assorted fruit and/or honey to serve
Mash the banana and eggs together (either by hand or I use my Nutribullet to get a smoother, more combined consistency). Add the pinch of cinnamon and handful of blueberries. Heat a frying pan with a little coconut oil in the bottom and add your mixture to the pan. Fry until golden brown on each side and cooked through.
Top with chopped fruits of your choice and a drizzle of honey, or enjoy on their own.
